I've said it many times that Cakes by Joy began with that old familiar phrase, "I woke up one morning and..." And the rest is history, I woke up and said I was going to begin cake decorating classes. Before my first class was over I was hooked! I knew then and there that cake pans were going to be my best friends.
I have to say that my "late in life" discovered talent is truly a gift from God. Overall I am a self taught cake decorator. I have been decorating for approximately four years. I've put many hours into reading and researching cake decorating techniques and perfecting recipes. I have been fortunate enough to sit under the instruction of extremely talented sugar artists such as, Kerry Vincent, Bronwen Weber, and Geraldine Randlesome. I am an active member of the International Cake Exploration Societe (ICES).
Why do I enjoy baking and decorating cakes? Because it is so relaxing. From start to finish, I enjoy building your cake. I'll put on some good music and turn into an egg cracking, chocolate melting, lemon zesting wonder! That's why I can say without hesitation that my cakes are, "Joy-fully Delicious!"
How many times have you heard, "You know Diannes' cake was beautiful but it tasted like cardboard!" That cannot be said about my cakes. My cakes are extremely moist and fresh. I do not prebake and freeze my cakes. Each cake is made the week of your wedding or event. I do not do more than one wedding per weekend to ensure each customer receives my total attention.
I enjoy baking, that's the bottom line. I give it my best because that's what you, my customer deserves.
